Apple and Sweet Potato Soup Recipe

Serves: 4-6 

This comforting Apple and Sweet Potato Soup is a nourishing blend of warm spices, creamy coconut milk, and wholesome ingredients. It’s the perfect cozy, plant-based dish for fall, offering a delicious way to boost your nutrient intake with every spoonful! 

Ingredients (organic/biodynamic) 

  • 2 apples, peeled and chopped 
  • 2 medium sweet potatoes, peeled and chopped 
  • 1 small red onion, chopped 
  • 2 garlic cloves, minced 
  • ½ tsp Ceylon cinnamon 
  • ¼ tsp nutmeg 
  • 3 c. vegetable broth 
  • ½ c. coconut milk (unsweetened, full-fat or light) 
  • Celtic Sea Salt®  and freshly ground black pepper to taste 
  • Fresh herbs for garnish (optional) 

Instructions: 

  1. In a large pot, sauté the onion and garlic in a little vegetable broth until soft. 
  2. Add the sweet potatoes, apples, cinnamon, and nutmeg, and stir well. 
  3. Pour in the remaining vegetable broth and simmer for 20-25 minutes until the sweet potatoes are tender. 
  4. Using an immersion blender or a regular blender, blend the soup until smooth. 
  5. Stir in the coconut milk, season with salt and pepper, and serve warm with fresh herbs on top.
