This comforting Apple and Sweet Potato Soup is a nourishing blend of warm spices, creamy coconut milk, and wholesome ingredients. It’s the perfect cozy, plant-based dish for fall, offering a delicious way to boost your nutrient intake with every spoonful!
Ingredients (organic/biodynamic)
- 2 apples, peeled and chopped
- 2 medium sweet potatoes, peeled and chopped
- 1 small red onion, chopped
- 2 garlic cloves, minced
- ½ tsp Ceylon cinnamon
- ¼ tsp nutmeg
- 3 c. vegetable broth
- ½ c. coconut milk (unsweetened, full-fat or light)
- Celtic Sea Salt® and freshly ground black pepper to taste
- Fresh herbs for garnish (optional)
Instructions:
- In a large pot, sauté the onion and garlic in a little vegetable broth until soft.
- Add the sweet potatoes, apples, cinnamon, and nutmeg, and stir well.
- Pour in the remaining vegetable broth and simmer for 20-25 minutes until the sweet potatoes are tender.
- Using an immersion blender or a regular blender, blend the soup until smooth.
- Stir in the coconut milk, season with salt and pepper, and serve warm with fresh herbs on top.
