This beet, carrot & ginger purée is a warming winter meal that nourishes both body and mind. Sweet beets and carrots combine with a hint of ginger to support circulation and vascular health. Smooth, comforting, and wholesome, it’s a simple way to enjoy seasonal vegetables.

Ingredients (organic/biodynamic):
- 2 medium beets, peeled and diced
- 2 medium carrots, peeled and sliced
- 1–2 tsp. fresh ginger, grated (to taste)
- 1 clove garlic (optional)
- 1–1½ c. water or low-sodium vegetable broth
- Lime juice, to finish
- Pinch of Celtic Sea salt®
- Parsley and/or carrot curls for garnish (optional)
Instructions:
- Place beets, carrots, ginger, and garlic (if using) in a saucepan.
- Add water or broth just to cover.
- Bring to a gentle simmer, cover, and cook until vegetables are very tender (about 25–30 minutes).
- Transfer everything, including some cooking liquid, to a blender.
- Blend until smooth and creamy, adding more liquid as needed to reach a thick purée.
- Taste and finish with lime juice and a pinch of salt if desired.
- Garnish with parsley and/or carrot curls (optional) and serve.
