Beet, Carrot & Ginger Purée

This beet, carrot & ginger purée is a warming winter meal that nourishes both body and mind. Sweet beets and carrots combine with a hint of ginger to support circulation and vascular health. Smooth, comforting, and wholesome, it’s a simple way to enjoy seasonal vegetables.

Servings: 2 

Ingredients (organic/biodynamic):

  • 2 medium beets, peeled and diced
  • 2 medium carrots, peeled and sliced
  • 1–2 tsp. fresh ginger, grated (to taste)
  • 1 clove garlic (optional)
  • 1–1½ c. water or low-sodium vegetable broth
  • Lime juice, to finish
  • Pinch of Celtic Sea salt®
  • Parsley and/or carrot curls for garnish (optional)

Instructions:

  1. Place beets, carrots, ginger, and garlic (if using) in a saucepan.
  2. Add water or broth just to cover.
  3. Bring to a gentle simmer, cover, and cook until vegetables are very tender (about 25–30 minutes).
  4. Transfer everything, including some cooking liquid, to a blender.
  5. Blend until smooth and creamy, adding more liquid as needed to reach a thick purée.
  6. Taste and finish with lime juice and a pinch of salt if desired.
  7. Garnish with parsley and/or carrot curls (optional) and serve.
