Bitter Lime-Mint Granita

Cool, tart, and naturally sweet, this Bitter Lime-Mint Granita is a refreshing way to enjoy a lighter summer treat. Made with ripe pears, fresh lime, mint, and digestive bitters, it’s the perfect icy dessert for warm days and a flavorful twist on seasonal wellness.

Servings: 1–2

Ingredients (organic/biodynamic):

  • 2 ripe pears, peeled, cored, and chopped 
  • ½ c. fresh lime juice 
  • 1 c. water 
  • A few drops PERQUE DigestivAide™ herbal bitters
  • 10 fresh mint leaves, finely chopped 
  • Pinch of Celtic Sea Salt® 

Instructions:

  1. Blend the base: Combine the pears, lime juice, water, digestive bitters, mint, and sea salt in a blender. Blend until completely smooth. 
  2. Pour into a pan: Pour the mixture into a shallow baking dish or metal pan. 
  3. Freeze: Place in the freezer for about 45–60 minutes, or until the edges begin to freeze. 
  4. Scrape: Using a fork, scrape the frozen edges into icy crystals and stir them into the unfrozen center. 
  5. Repeat: Return the pan to the freezer and scrape every 30 minutes until the entire mixture has a light, fluffy, crystalline texture (about 2–3 hours total). 
  6. Serve: Spoon into chilled bowls or glasses and garnish with a sprig of fresh mint or a thin slice of lime, if desired.
