Creamy Mango Coconut Sweet Potato Pudding

Ingredients (organic/biodynamic): 

  • 1 medium sweet potato, baked until tender
  • 1/2 c. light coconut milk
  • 1/2 tsp. pure vanilla extract
  • Pinch of Celtic Sea salt®
  • 1 ripe mango, diced

Optional Flavor Boosts 

  • Ground Ceylon cinnamon 
  • Coconut flakes

Instructions:

  1. Bake the sweet potato until very soft. Allow it to cool slightly, then remove the skin.
  2. Add the sweet potato, coconut milk, vanilla, and Celtic Sea salt to a blender or food processor. Blend until smooth and creamy.
  3. Spoon into a bowl and top with diced mango.
  4. Enjoy immediately or chill for 30 minutes for a richer, pudding-like texture.
