Pumpkin Seeds pack a nutritious and delicious punch with minerals, healthy fats, and fiber packed into a little seed. This easy Fall salad dressing combines pumpkin seeds with garlic, herbs, lime juice and figs to create a delightful pop of flavor!
Ingredients
⅓ c. raw organic pumpkin seeds, without shells
1 organic lime, juiced
1 c. organic flat leaf parsley
1 clove organic garlic
½ tsp. fresh organic thyme
½ tsp Celtic Sea Salt
2 organic dried figs, without added sugar
1 c. water
Freshly ground black pepper, to taste
Directions
- Soak pumpkin seeds for 3 hours. Rinse and drain the pumpkin seeds before setting aside. Discard soaking liquid.
- Soak dried figs for 10-15 minutes in warm water. Drain & discard soaking liquid.
- In a blender, add all of the ingredients and half of the water. Blend on high until creamy.
- Add more water as needed and blend until the dressing is at the desired consistency.
- Serve and enjoy!
