Easy No-Bake Gluten-Free Carrot Pecan Bites Recipe

This super-easy recipe will satisfy the sweet tooth of those with gluten, soy, egg, or dairy allergies. These nutritious little bites pack a flavor punch, like a mini-carrot cake!

Ingredients (organic/biodynamic)

1 c. shredded carrot
1 c. pitted dates
1 c. unsalted, shelled pecans
2 tsp. vanilla extract
¾ tsp ground cinnamon
½ tsp. ground ginger
¼ tsp. Celtic Sea Salt®
Pinch ground nutmeg

Directions

  1. Place all ingredients into a food processor and process until coarsely chopped. You may need to stop a couple times to scrape the edges of the bowl. Do not overprocess or mixture will become oily.
  2. Remove blade. Roll mixture into small balls and place on dish or platter. Makes 11-12 bite-sized balls.
  3. Note: I placed mine in the freezer to set a bit since I didn’t use any flour. You may opt to use a little almond or coconut flour if you like your bites a bit more dense.
