This super-easy recipe will satisfy the sweet tooth of those with gluten, soy, egg, or dairy allergies. These nutritious little bites pack a flavor punch, like a mini-carrot cake!
Ingredients (organic/biodynamic)
1 c. shredded carrot
1 c. pitted dates
1 c. unsalted, shelled pecans
2 tsp. vanilla extract
¾ tsp ground cinnamon
½ tsp. ground ginger
¼ tsp. Celtic Sea Salt®
Pinch ground nutmeg
Directions
- Place all ingredients into a food processor and process until coarsely chopped. You may need to stop a couple times to scrape the edges of the bowl. Do not overprocess or mixture will become oily.
- Remove blade. Roll mixture into small balls and place on dish or platter. Makes 11-12 bite-sized balls.
- Note: I placed mine in the freezer to set a bit since I didn’t use any flour. You may opt to use a little almond or coconut flour if you like your bites a bit more dense.
