This simple three-ingredient dessert (Medjool dates, cheese, and pistachio) is delicious and perfect for those avoiding added sugar. It pairs exceptionally well with Mediterranean flavors.
Ingredients (Organic/biodynamic)
Medjool dates, pitted and sliced lengthwise, but not all the way through
Goat cheese, traditional (or cashew cheese as a vegan option).
Roasted unsalted pistachios
Directions
- Open a date (see image) and scoop goat cheese into each date with a spoon.
- Press into place to smooth the top
- With a mortar and pestle, crush a few pistachios into coarse pieces
- Sprinkle the pistachios on top of the goat cheese and press into place
- Serve 2 per person.
