Ingredients (organic/biodynamic)
DRESSING
- 3 Tbsp. goat cheese, at room temperature
- ¼ apple cider vinegar
- 1 tsp. black pepper
- Garlic powder, to taste
SALAD
- 1 c. arugula
- ½ c. spinach
- 2 Tbsp. diced yellow bell pepper
- 2 Tbsp. sunflower seeds
- 1 Tbsp. diced red onion
- Half a peach, sliced
- Place goat cheese and vinegar into a small bowl and mix until evenly combined into a smooth, creamy dressing.
- Add black pepper and garlic powder to taste and stir until thoroughly combined.
- In a medium serving bowl, combine the arugula and spinach.
- Add the yellow bell pepper, sunflower seeds, and red onion to the greens mixture.
- Drizzle your desired amount of dressing over the salad; if any remains, it can be stored for future salads.
- Stir to mix ingredients (if desired), then top with peach slices.
