End-of-Summer Peach and Arugula Salad Recipe

Enjoy this vibrant, healthy, and tasty salad. The goat cheese/apple cider vinegar dressing highlights the arugula and peach, making this salad burst with flavor. This recipe serves one; you can double to share!

Ingredients (organic/biodynamic) 

DRESSING

  • 3 Tbsp. goat cheese, at room temperature
  • ¼ apple cider vinegar
  • 1 tsp. black pepper
  • Garlic powder, to taste

SALAD

  • 1 c. arugula
  • ½ c. spinach
  • 2 Tbsp. diced yellow bell pepper
  • 2 Tbsp. sunflower seeds
  • 1 Tbsp. diced red onion
  • Half a peach, sliced
  1. Place goat cheese and vinegar into a small bowl and mix until evenly combined into a smooth, creamy dressing.
  2. Add black pepper and garlic powder to taste and stir until thoroughly combined.
  3. In a medium serving bowl, combine the arugula and spinach.
  4. Add the yellow bell pepper, sunflower seeds, and red onion to the greens mixture.
  5. Drizzle your desired amount of dressing over the salad; if any remains, it can be stored for future salads.
  6. Stir to mix ingredients (if desired), then top with peach slices.
  7. Enjoy!
