Fluffy Mashed Cauliflower Recipe

Serves 3-4

Indulge guilt-free with our oil-free, sugar-free, dairy-free, and vegan mashed cauliflower, a deliciously wholesome alternative to traditional mashed potatoes. Packed with flavor and low in calories, it’s the perfect side dish for a healthier, tastier meal.

Ingredients (organic/biodynamic)

  • 1 head of cauliflower, cut into florets
  • 2 cloves garlic, minced
  • 1/4 c. unsweetened almond milk
  • 1/4 c. low-sodium vegetable broth
  • 2 Tbsp. nutritional yeast (for a cheesy flavor, optional)
  • Celtic Sea Salt® and pepper to taste
  • Chopped fresh herbs (such as chives or parsley) for garnish (optional)

Instructions

  1. Place the cauliflower florets in a steamer basket over a pot of boiling water. Cover and steam for about 10-15 minutes or until the cauliflower is tender and can be easily pierced with a fork.
  2. While the cauliflower is steaming, heat a few tablespoons of vegetable broth in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.
  3. Transfer the steamed cauliflower to a food processor or blender. Add the sautéed garlic, almond milk, nutritional yeast (if using), and a pinch of salt and pepper. Blend until the mixture is smooth and creamy. You may need to stop and scrape down the sides of the processor or blender a few times to ensure even blending.
  4. If the mashed cauliflower is too thick, you can add more almond milk or vegetable broth, one tablespoon at a time, until you achieve your desired consistency.
  5. Adjust seasoning to taste.
  6. Transfer the mashed cauliflower to a serving dish. Garnish with chopped fresh herbs, if desired, and serve hot.
