This flavorful soup combines the sweetness of apples with the earthiness of butternut squash, enhanced by aromatic spices like cinnamon and nutmeg. Perfect for a cozy meal, it serves 6 and is made with organic ingredients. Simply cook the onion and garlic, add the remaining ingredients, simmer until tender, and blend until smooth. Season to taste and enjoy a warm, comforting bowl of goodness.
Ingredients (organic/biodynamic):
- 1 large onion (chopped)
- 3 cloves garlic (minced)
- 5 c. of vegetable broth
- 1 large butternut squash (peeled, seeded, and cubed)
- 2 large apples (peeled, cored, and chopped)
- 1 tsp. ground Ceylon cinnamon
- ½ tsp. ground nutmeg
- ½ tsp. Celtic Sea Salt® (optional, to taste)
Instructions:
- In a large pot, add the chopped onion and garlic with ½ cup of the vegetable broth. Cook over medium heat, stirring occasionally, until the onion becomes translucent.
- Add the remaining ingredients and bring mixture to a boil, then reduce the heat and let simmer for 25 minutes or until the butternut squash is tender.
- Using an immersion blender*, puree the soup until smooth. If you don’t have an immersion blender you can transfer the soup in batches to a regular blender and blend until smooth.
- Season with salt to taste. Garnish with fresh thyme if desired.
