Made with rich duck eggs and aromatic herbs, they’re a delicious, meal-prep-friendly way to fuel your morning without added oils!
Ingredients (organic/biodynamic)
- 3 duck eggs
- ¼ c. unsweetened almond milk
- ½ tsp. dried oregano
- ½ tsp. dried basil
- ¼ tsp. freshly ground black pepper
- Pinch Celtic Sea Salt® (optional)
- Zest of ½ a lime
- ¼ c. finely chopped spinach
- ¼ c. chopped red bell peppers
- 2 Tbsp. finely diced red onion
Instructions
- Preheat oven to 350°F (175°C). Line a regular muffin tin with parchment cups to prevent sticking.
- Whisk duck eggs in a mixing bowl with almond milk, oregano, basil, black pepper, Celtic Sea Salt (as needed), and lime zest.
- Fold in the add-ins—chopped spinach, red bell peppers, and red onion.
- Pour the mixture evenly into muffin cups, filling about ¾ of the way.
- Bake for 20–25 minutes until the egg bites are set and slightly golden on top.
- Let cool slightly, then carefully remove from the muffin tin and peel off the parchment paper.
