No-Bake Date Lime Coconut Bars

Indulge in these delicious date lime coconut bars—a naturally sweet, zesty treat packed with nourishing ingredients. Medjool dates provide fiber and lasting energy, while lime adds a refreshing boost of vitamin C, and shredded coconut offers healthy fats for satiety and brain health. Free from refined sugar and artificial additives, these bars are the perfect guilt-free snack to fuel your day!

Ingredients (organic/biodynamic)

  • 1 c. unsweetened shredded coconut
  • 1 c. Medjool dates (about 10), pitted and softened if needed
  • Zest of 2 limes
  • Juice of 1 lime
  • ½ tsp. vanilla extract
  • A pinch of Celtic Sea Salt®

    Instructions:
  1. If your dates are firm, soak them in warm water for 5–10 minutes, then drain.
  2. In a food processor, combine shredded coconut, softened dates, lime zest, lime juice, vanilla, and salt. Blend until a sticky dough forms. Scrape down the sides of the bowl as needed.
  3. Line a small pan with parchment paper. Press the mixture firmly and evenly into the pan.
  4. Place in the freezer for at least 1 hour to firm up.
  5. Once firm, slice into bars or squares. Store in an airtight container in the fridge for up to a week.
  6. Sprinkle extra shredded coconut on top before serving.
