Nutrient-Packed Date Delights: Chocolate-Coconut Energy Bites

Ingredients (all organic/biodynamic):

  • 1 cup toasted coconut flakes
  • 1 cup pitted dates
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 cup almond butter
  • 1/2 cup toasted almonds, chopped
  • 2 tablespoons ground flaxseed

Instructions:

  1. In a food processor, combine the toasted coconut flakes, pitted dates, cocoa powder, vanilla extract, almond butter, toasted chopped almonds, and ground flaxseed. Pulse the mixture until well combined and forms a sticky dough-like texture.
  2. Take small portions of the dough and roll it into bite-sized balls, approximately 1 inch in diameter. If the mixture feels too sticky to handle, lightly wet your hands with water to prevent sticking.
  3. Place the energy bites on a baking sheet lined with parchment paper or a silicone mat. Continue rolling until all the mixture is used.
  4. Once all the energy bites are rolled, place the baking sheet in the refrigerator for at least 30 minutes to firm up. This will help the bites hold their shape.
  5. Once chilled and firm, the energy bites are ready.
