Oil-Free Hummus

Here is an easy, authentic hummus recipe, free of added oil. With just a few ingredients, this dip is creamy and a real treat for hungry tastebuds. Made with organic tahini (hulled roasted and whipped sesame seeds), organic chickpeas, garlic, lemon or lime juice, pepper and salt, this healthy and easy hummus can be used on roasts, salads, sliced vegetables and as veggie/fruit dips.

Ingredients (Organic/biodynamic)

  • 15 oz cooked or hydrated chickpeas/garbanzo beans
  • 3 T lemon or lime juice
  • 2 T tahini
  • 2 garlic cloves
  • ½ tsp. Celtic Sea salt
  • A few ice cubes
  • Paprika for garnish and extra flavor on top
  • Fresh ground pepper for garnish
  • Fresh parsley for garnish

Directions

  1. Soak chickpeas in a bowl of water for at least 4-6 hours. Soaking the chickpeas helps soften the skins. The softer skin helps them peel off easily and blend easier.
  2. Peel the chickpeas. Although a little tedious, peeling the chickpeas helps create a better texture and mouth feel.
  3. Add the peeled chickpeas, garlic, salt and tahini to a high-powered blender or food processor.
  4. Add in fresh-squeezed lemon or lime juice.
  5. Add a few ice cubes to the blender after processing the ingredients for a few seconds.
  6. Blend for 4-5 minutes in a strong blender or food processor for a smooth, creamy texture.
  7. Top with Paprika, fresh cracked pepper, and parsley for some contrasting color.
  8. Enjoy!
