Mujadara is a signature Middle Eastern dish of lentils and rice w/ crispy fried onions. Experience the taste of Mujadara without the added oil. This gluten-free, oil-free, vegan main dish offers a nutritious and delicious alternative without compromising on flavor.
Ingredients (organic/biodynamic):
- 5 large red onions, thinly sliced
- 6 Tbsp. water (or more as needed; see instructions)
- 1/2 c. green or brown lentils
- 1/2 c. wild rice
- 2 c. vegetable broth
- 1/2 tsp. ground cumin
- 1/2 tsp. ground coriander
- Celtic Sea Salt® and pepper to taste
Instructions:
- In a large saucepan over medium heat, spread the onions into a flat layer and add 3 Tbsp. water. Stir once and cover the pan.
- Cook for a total of 30-40 minutes, removing the lid and stirring every 5 minutes or so. Add 1 Tbsp water at a time as needed to prevent sticking/burning.
- Once onions begin to brown slightly (around 10 minutes), turn heat to low and continue cooking as described above.
- While the onions are caramelizing, rinse lentils and wild rice under cold water, and place into a separate pot.
- Add vegetable broth, cumin, coriander, salt, and pepper, and stir well.
- Cover and gently simmer for about 45-60 minutes or until the lentils and wild rice are cooked and the liquid is absorbed.
- Meanwhile, continue cooking/ caramelizing the onions until done, and remove pan from heat.
- When lentils/rice are cooked, remove the pot from heat and let it sit, covered, for an additional 5 minutes.
- Add onions to the lentil/rice mixture, reserving a few onions for garnish, and stir until combined.
- Transfer to serving dish, garnishing with reserved onions.
