We were recently asked to test and review the Kuhn-Rikon® Hotpan*. Since its insulating technology makes it easy to cook oil-free, healthy dishes, we decided to put it to the test with this slow-cooked lentil and vegetable stew. This hearty and nutritious blend of fresh vegetables, lentils, and seeds is perfect for a cozy meal. The Hotpan was easy to use, allowing us to remove the stew from the stove and leave it in the insulated pan to continue to cook while we completed other tasks outside of the kitchen. It provided a slow, even cook, allowing the flavors to meld beautifully.
Ingredients (organic/biodynamic)
- ¼ c. water (or less) for sautéing
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 bell peppers, diced
- 1 zucchini, chopped
- 1 tsp. cumin
- 1 tsp. smoked paprika
- Celtic Sea Salt® and freshly ground black pepper to taste
- 5–6 whole tomatoes, diced
- 4 c. vegetable broth
- 1 c. dried lentils, rinsed
- 2 Tbsp. sunflower seeds
- 2 Tbsp. pumpkin seeds
- 1 Tbsp. chia seeds
Instructions:
- Remove the inner pot from the Kuhn-Rikon Hotpan. You will use this to prepare the stew on the stove prior to slow-cooking.
- Add water, and over medium heat, sauté the onion, garlic, carrots, and celery until soft (about 5 minutes).
- Add bell peppers and zucchini, continuing to sauté for another 3-4 minutes. Stir in cumin, smoked paprika, salt, and pepper.
- Add the diced tomatoes and vegetable broth and heat through until bubbles begin to form.
- Stir in the lentils, reduce the heat, and let the stew simmer on the stove for about 10 minutes, so that the lentils can begin to absorb the flavors.
- Add the sunflower, pumpkin, and chia seeds, stirring them in.
- Immediately remove the pot from the stove and place it inside the insulating bowl of the three-part Kuhn Rikon Hotpan.
- Let the stew continue to cook in the Hotpan for 2-3 hours, allowing the seeds to soften and the lentils to become fully tender.
- The Hotpan will keep it cooking gently, and the seeds will release their nutrients while blending into the stew.
- Once fully cooked, stir, taste, and adjust seasoning if needed. Enjoy with a sprinkle of extra seeds on top for added texture.
