Enjoy a burst of flavor with this Rainbow Veggie Salad, blending a colorful assortment of fresh vegetables with a tangy Lime Tahini Dressing. It’s a healthy and delicious way to brighten up any meal!
Ingredients (organic/biodynamic):
Salad
- 1 c. red cabbage, thinly sliced
- 1 c. carrots, shredded
- 1 c. cherry tomatoes, halved
- 1 c. cucumbers, sliced
- 1 yellow bell pepper, sliced into strips
- ¼ medium red onion, thinly sliced
- ¼ c. fresh parsley, chopped
Lime Tahini Dressing
- 3 Tbsp. tahini
- 2 Tbsp. freshly squeezed lime juice
- 1 Tbsp. apple cider vinegar
- 1 garlic clove, minced
- 1-2 Tbsp. water (to thin, as needed)
- Celtic Sea Salt® and freshly ground black pepper, to taste
Instructions:
- In a large bowl, combine all the prepared veggies: red cabbage, carrots, cherry tomatoes, cucumbers, bell pepper, red onion, and parsley. Toss to mix well.
- Whisk together the tahini, lime juice, apple cider vinegar, and minced garlic in a small bowl. Gradually add water, one tablespoon at a time, until you reach your desired dressing consistency—season with salt and pepper to taste.
- Pour the dressing over the salad and toss to coat the vegetables evenly. Serve immediately, or chill in the fridge for 15-30 minutes to allow the flavors to meld together.
