Rainbow Veggie Salad Recipe

Enjoy a burst of flavor with this Rainbow Veggie Salad, blending a colorful assortment of fresh vegetables with a tangy Lime Tahini Dressing. It’s a healthy and delicious way to brighten up any meal!

Ingredients (organic/biodynamic):

Salad

  • 1 c. red cabbage, thinly sliced
  • 1 c. carrots, shredded
  • 1 c. cherry tomatoes, halved
  • 1 c. cucumbers, sliced
  • 1 yellow bell pepper, sliced into strips
  • ¼ medium red onion, thinly sliced
  • ¼ c. fresh parsley, chopped

Lime Tahini Dressing

  • 3 Tbsp. tahini
  • 2 Tbsp. freshly squeezed lime juice
  • 1 Tbsp. apple cider vinegar
  • 1 garlic clove, minced
  • 1-2 Tbsp. water (to thin, as needed)
  • Celtic Sea Salt® and freshly ground black pepper, to taste

Instructions:

  1. In a large bowl, combine all the prepared veggies: red cabbage, carrots, cherry tomatoes, cucumbers, bell pepper, red onion, and parsley. Toss to mix well.
  2. Whisk together the tahini, lime juice, apple cider vinegar, and minced garlic in a small bowl. Gradually add water, one tablespoon at a time, until you reach your desired dressing consistency—season with salt and pepper to taste.
  3. Pour the dressing over the salad and toss to coat the vegetables evenly. Serve immediately, or chill in the fridge for 15-30 minutes to allow the flavors to meld together.
  4. Enjoy!
