Sautéed Broccoli & Mushroom Medley with Coconut Aminos

Serves: 2-3

Our Sautéed Broccoli & Mushroom Medley with Coconut Aminos is a fresh, veggie-packed dish with a natural sweetness. It’s an easy, wholesome side or light meal full of flavor and color.

Ingredients (organic/biodynamic)

  • 1 head broccoli, cut into florets
  • 2 cloves garlic, minced
  • 2 Tbsp. coconut aminos
  • 1 c. shitake mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 Tbsp. fresh ginger, grated
  • Optional: sesame seeds or chopped green onions for garnish

Instructions

  1. Lightly steam broccoli florets until just tender, then set aside.
  2. In a large pan, add a splash of water and sauté garlic and ginger until fragrant. Add mushrooms and red bell pepper, cooking until softened.
  3. Add the steamed broccoli and coconut aminos to the pan. Stir well and cook for another 2-3 minutes.
  4. Transfer to a serving dish and garnish with sesame seeds or green onions if desired.
