Try this hearty and wholesome egg-free Savory Veggie Loaf, made with lentils and fresh veggies for a nutritious plant-based meal. The flax seeds and water act as an egg substitute to help bind the other ingredients together. With simple ingredients and bold flavors, this veggie loaf is perfect for a cozy dinner!
Ingredients (organic/biodynamic):
- 1 c. cooked lentils, mashed
- ½ c. grated carrot
- ½ c. chopped celery
- ¼ c. chopped onion
- 1 Tbsp. ground flaxseed + 3 Tbsp. water
- 1 tsp. garlic powder
- 1 tsp. dried thyme
- ½ tsp. smoked paprika
- Celtic Sea Salt® and freshly ground black pepper to taste
Instructions:
- Preheat oven to 375°F (190°C) and line a loaf pan with parchment paper.
- In a small bowl, combine the ground flaxseed and water. Let it sit for 5 minutes to form a gel.
- In a large bowl, combine the mashed lentils, grated carrot, celery, onion, and seasonings. Add the flaxseed mixture and combine thoroughly.
- Press the mixture firmly into the prepared loaf pan and smooth the top.
- Place the loaf in the oven and bake for 30–35 minutes or until firm.
- Let the loaf cool for about 10 minutes before slicing and serving.
