Slow-Roasted Duck, Gluten-Free, Sugar-Free, Oil-Free Recipe

Relish in this slow-cooked duck that is packed with amazing flavors. This simple, healthy, and tasty treat will leave you wanting more. Note: Since the cooking takes 10-15 hours, we recommend starting this recipe early in the morning to have a delicious duck dinner!

Serves 4

Ingredients (organic/biodynamic):

  • 1 6-pound duck
  • 4 shallots or 2 red onions
  • 3 yams or sweet potatoes
  • 2 stalks celery
  • 2 carrots
  • 2 apples, cored
  • ½ tsp. Ceylon cinnamon
  • ½ tsp. ground coriander
  • 1 tsp. Apple Cider vinegar
  • 2 tsp. tahini
  • 1 tsp. Celtic Sea Salt®
  • Freshly ground black pepper to taste

Instructions:

  1. Allow the duck to rest at room temperature. When ready to cook, preheat oven to 225°F
  2. Coarsely chop the shallots/onions, yams/sweet potatoes, celery, carrots and apples, and arrange them in a large roasting pan.
  3. Place the duck into the pan.
  4. In a small bowl, combine the spices with the vinegar and tahini.
  5. Brush or rub the spice mixture all over the duck, to coat.
  6. Roast the duck for 10-15 hours at 225º F, basting every few hours, enjoying the aroma that fills the house!
  7. Enjoy your beautifully slow-roasted duck!
