Serves 5-6

Ingredients (organic/biodynamic)

  • 7-8 Medjool dates, pitted (adjust to taste)
  • 2 ripe avocados
  • ⅓ c. unsweetened cocoa powder
  • ⅓ unsweetened almond milk (or other dairy-free milk)
  • 1 tsp. vanilla extract
  • Pinch of Celtic Sea Salt®
  • Optional toppings: berries, chopped nuts, mint or shredded coconut.

Instructions:

  1. If not already soft, soak dates in warm water for 10-15 minutes, and drain.
  2. Cut the ripe avocados in half, remove the pits, and scoop the flesh into a blender or food processor.
  3. Add dates to avocado halves, and blend together until mixture becomes smooth and creamy.
  4. Add cocoa powder, unsweetened almond milk, vanilla extract, and a pinch of Celtic Sea Salt® and blend until smooth. Scrape down the sides of the blender or food processor as needed.
  5. Taste the pudding and adjust the sweetness by adding more dates if necessary.
  6. Transfer the chocolate pudding to a bowl or individual serving glasses and refrigerate for at least 1-2 hours.
  7. Once chilled, serve the chocolate avocado pudding with your favorite toppings such as berries, chopped nuts, or shredded coconut.
