Vegan Sweet Potato Hash Recipe

Savor this delightful vegan Sweet Potato Hash for breakfast or with any meal of the day!

Serves 4-5

Ingredients (organic/biodynamic)

  • 2 sweet potatoes
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp. smoked paprika
  • ½ tsp. cumin
  • ½ c. water
  • Celtic Sea Salt® and pepper to taste
  • Fresh parsley or green onions for garnish (optional)

Instructions

  1. Peel the sweet potatoes and dice them into small, bite-sized cubes.
  2. Add the diced onion and garlic to a large skillet and cook over medium heat until the onion becomes translucent. Add a splash of water if needed so the onion doesn’t stick to the pan.
  3. Add the sweet potatoes to the skillet. Cook for about 8-10 minutes, stirring occasionally, until the sweet potatoes become tender, adding a little water as needed so the potatoes don’t stick to the pan.
  4. Add the red peppers to the skillet. Stir in the smoked paprika, cumin, Celtic Sea Salt®,  and pepper. Continue cooking for an additional 5-7 minutes until the peppers are tender, again adding a splash of water as needed.
  5. Taste, and adjust the seasoning if needed.
  6. Remove the skillet from the heat and transfer to a serving bowl.
  7. Garnish your hash with fresh parsley or green onion and enjoy!
