Baby Artichoke and Sweet Potato Hash

This hearty and nutritious dish combines tender baby artichokes with earthy sweet potatoes, aromatic onions, and vibrant bell peppers, seasoned to perfection with smoked paprika, salt, and pepper. Whether served for breakfast, brunch, or as a satisfying side dish, this delicious hash is sure to tantalize your taste buds and leave you craving more.

Serves 4

Ingredients (organic/biodynamic):

  • 12-16 baby artichokes
  • Juice of ½ lime (to keep artichokes from browning)
  • 2 medium sweet potatoes, diced
  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tsp. smoked paprika
  • Celtic Sea Salt® and Freshly ground black pepper to taste
  • Fresh parsley for garnish (optional)


  1. Trim and clean the baby artichokes, removing tough outer leaves and trimming the tops. Cut in half and slice thinly.
  2. Place slices into a bowl of water with lime juice while you continue to prepare the remaining baby artichokes.
  3. In a large skillet over medium heat, add the diced sweet potatoes and cook until tender. Add a splash or two of water as needed so potatoes do not stick to the pan.
  4. Add the diced red onion, minced garlic, and sliced baby artichokes to the skillet. Cook until the vegetables are tender, stirring often.
  5. Add in the diced red bell pepper, smoked paprika, Celtic Sea Salt, and freshly ground black pepper. Cook for an additional 2-3 minutes.
  6. Remove from heat serve. (Garnish with fresh parsley if available)
  7. Enjoy!
