Cozy Winter Squash Soup Recipe

Enjoy this “comfort in a bowl” with simple and easy everyday ingredients.

Ingredients (all organic/biodynamic):

Vegetables/fruit – all roughly chopped.
1 medium onion
1 small butternut squash, deseeded.
2 medium carrots
4-5 ribs celery
½ apple

Herbs & Spices

½ c. fresh basil
1 tsp. cumin powder
1-2 cloves
1-2 whole peppercorns
1 bay leaf
½ whole dried cayenne pepper (optional)
Celtic Sea salt to taste.
Water (or vegetable stock) for cooking

Directions:

  1. Place the chopped vegetables and apples in a saucepan with just enough water (or vegetable broth) to cover them.
  2. Once half cooked, add the whole dried spices and mix well.
  3. Add the fresh basil (except for a few leaves) at the very end – after the vegetables are cooked well and just before turning off the stove.
  4. Blend the cooked vegetables to a smooth consistency in a high performance blender (like a Vitamix®, adding water or vegetable stock for desired consistency.
  5. Transfer back to the saucepan. Adjust final consistency with water or vegetable stock and bring to boil right before serving.
  6. Serve hot, and garnish with a couple of basil leaves.
  7. Enjoy with your favorite oil-free salad or grain-free side.
