This refreshing recipe brings together a medley of garden-fresh ingredients to create a simple, yet flavorful dish. Tomatoes, cucumbers, and red bell pepper blend seamlessly with aromatic garlic, onion, and basil, all enhanced by a touch of lime juice and apple cider vinegar. It’s an easy-to-make dish that’s perfect for a light meal or a cooling side, offering a taste of summer in every bite.
Ingredients (organic/biodynamic)
- 6 c. chopped tomatoes with skin on
- 2 c. chopped, de-seeded and peeled cucumbers
- ¾ c. minced red onion
- ½ c. chopped scallions
- 3 cloves of garlic (about 1 tbsp)
- 1 c. chopped red bell pepper
- ½ c. packed basil
- 2 Tbsp. apple cider vinegar
- 1½ Tbsp. fresh lime juice
- ½ tsp. Celtic Sea Salt® (optional, to taste)
Instructions
- Place all items into a blender.
- Blend on low speed, and then higher for a few seconds to desired consistency.
- Chill or eat right away and serve topped with fresh scallions.
