Crunchy Vegan Cucumber Subs Recipe

This recipe uses cucumber instead of bread to contain a filling of oil-free hummus and veggies for a healthy snack or lunch at home or on the go! Feel free to substitute or add in your favorite sandwich veggies to customize your perfect sub.

Ingredients (per sub; organic/biodynamic)

  • One medium to large cucumber
  • Oil-free Hummus
  • Kalamata olives, pitted and halved
  • Red Bell Pepper, sliced thin
  • Red Onion, sliced thin
  • Avocado, sliced
  • Baby Spinach leaves
  • Carrot, shredded



  1. Prepare all ingredients. Wash and peel cucumber either completely, or leaving stripes of peel for added nutrition and fiber.
  2. Cut off ends of cucumber. Cut cucumber in half the long way and remove seeds with a spoon, creating two “boats” that you will fill with your other ingredients.
  3. Fill one half with hummus and place the sliced olives on top. Layer the other half with the sliced red pepper, red onion, and avocado.
  4. Place spinach leaves on the hummus side, and shredded carrot on the veggies side.
  5. Roll the two halves toward each other to complete the sub. Slice horizontally and enjoy!
